Butter Beans & Mushroom Soup Recipe

Serves 4


Soup is one of the easiest meals to prepare in a short amount of time. This one is nice and filling.


Butter Beans & Mushroom Soup Recipe


1/8 cup butter
2 leeks, chopped
2 garlic cloves, finely chopped
1/4 cup chopped parsley
2 x punnets brown mushrooms, coarsely chopped
2 x 410 g can Rhodes Butter Beans
2 cups chicken stock
1/8 cup brandy
Salt and freshly ground black pepper


  1. Heat the butter in a saucepan and fry the leeks and garlic for several minutes. 
  2. Add the parsley and mushrooms and fry for about 5 minutes.
  3. Add the butter beans, chicken stock and brandy and bring to the boil.
  4. Use a stick blender to create a smooth soup.
  5. Simmer for a few minutes and serve with freshly baked bread.

Useful Tips

  • Brown mushrooms have more flavour and texture than white mushrooms.
  • Use a variety of different mushrooms if you prefer.
  • If the soup is too thick, add another cup or two of stock to thin it down.
