Granadilla Trifle Recipe

Serves 4-6

Trifle isn’t only for Christmas! If you make this recipe for children, replace the sweet wine with reserved syrup from the Rhodes Peach Slices.

Granadilla Trifle Recipe

1 x 385 g can condensed milk
1/3 cup lemon juice
1 Madeira loaf cake
¼ cup sweet wine
1 x 115 g cup Rhodes Granadilla Pulp
1 x 410 g can Rhodes Peach Slices in Syrup, drained
Fresh mint leaves to garnish

  1. Beat the condensed milk and lemon juice together in a mixing bowl until stiff and refrigerate for 10 minutes.
  2. Break the Madeira loaf into pieces; divide half between 6 dessert glasses and sprinkle with half the quantity of sweet wine.
  3. Cover the cake with half the Rhodes Granadilla Pulp and Rhodes Peach Slices.
  4. Cover the fruit with half the set condensed-milk mixture and then repeat the layers with the remaining ingredients.
  5. Garnish with the mint leaves and allow it to rest for several minutes before serving.

Useful Tips

  • For a creamier version, stir 250g creamed cottage cheese into the set condensed-milk mixture.
  • The flavour of the trifle improves if it stands for a while.
