Quick & Easy Mixed Bean Salad with Tangy Dressing



  • 30 ml (2 T) lemon juice
  • 5 ml (1 t) Dijon Mustard
  • 80 ml (⅓ C) olive oil
  • 1 clove garlic, finely crushed
  • 5 ml (1 t) sugar
  • salt and freshly ground pepper


  • 2 x 410 g can Rhodes Three Bean Mix, drained
  • 1 x 410 g can Rhodes Green Beans Cross Cut, drained
  • 1 small red onion, cut in small dices
  • 1 red pepper, cut in small dice
  • handful chopped coriander leaves
  • 100 g (½ C) feta cheese
  • salt and freshly ground pepper


  1. Whisk all the dressing ingredients together until well blended.
  2. Season the dressing to taste with the salt and freshly ground black pepper and set aside.
  3. Pour the Rhodes Three Bean Mix and the Rhodes Green Beans into a large bowl.
  4. Add the red onion, red pepper and chopped coriander, and toss to mix.
  5. Pour the dressing over the bean salad and stir gently to coat.
  6. Crumble the feta cheese into the salad and stir to combine.
  7. Season to taste with the salt and black pepper.
  8. Serve well chilled.
