Orange Chicken Marinade

Sweet orange marinade for braaied chicken

Ingredients

  • 250 ml (1 Cup) Rhodes Quality Orange 100% Fruit Juice Blend
  • juice of one lemon
  • 65 ml  olive oil
  • 30 ml (2 Tbsp) Dijon mustard
  • 2 garlic cloves, crushed
  • 8 chicken pieces, parboiled

Glaze

  • 65 ml  Rhodes Quality Orange 100% Fruit Juice Blend
  • 30 ml (2 Tbsp) butter
  • 65 ml  honey
  • 65 ml barbecue sauce
  • 30 ml (2 Tbsp) Dijon mustard

 

Method

  1. For the marinade whisk together the Rhodes Quality Orange 100% Fruit Juice Blend, lemon juice, olive oil, Dijon mustard and garlic.
  2. Place the chicken pieces in a large resealable bag.
  3. Pour in the orange marinade and seal the bag pressing out excess air.
  4. Refrigerate overnight or for at least 4 hours, turning the bag over a few times.
  5. To prepare the glaze, place the Rhodes Quality Orange 100% Fruit Juice Blend and the remaining ingredients into a small sauce pan.
  6. Simmer over a medium heat for 15 minutes, whisk to blend well.
  7. Braai the chicken pieces over a medium heat.
  8. About 10 minutes before the end of cooking, begin to brush the chicken on all sides with the glaze.
  9. Braai to golden.
  10. Pour over any remaining glaze and serve.
