Three Bean Greek Salad | Rhodes Quality

30 ml (2 T) lemon juice
5 ml (1 t) Dijon Mustard
80 ml (⅓ C) olive oil
1 clove garlic, finely crushed
5 ml (1 t) sugar
salt and freshly ground pepper
2 x 410 g can Rhodes Quality Three Bean Mix, drained and rinsed
125 ml (½ C) cherry tomatoes, halved
½ English cucumber, chopped
125 ml (½ C) kalamata olives
125 ml (½ C) red onion, chopped
125 g feta cheese, crumbled


Whisk all the dressing ingredients together until well blended. Season the dressing to taste with the salt and freshly ground black pepper and set aside. Pour the Rhodes Three Bean Mix into a large bowl. Add all the salad ingredients and toss well to mix. Add the desired amount of dressing and toss to combine. Chill before serving
