• 1 x 385 g bottle Rhodes Diced Beetroot
  • 500 g mixed baby tomatoes, chopped
  • 1 cucumber, sliced
  • 1 small red onion, sliced
  • 6 – 8 fresh basil leaves, torn
  • 30 ml (2 T) olive oil
  • Salt and freshly ground black pepper
  • to serve: balsamic vinegar reduction (optional)


  1. Drain the Rhodes Beetroot and set aside.
  2. Toss the tomatoes, cucumber, red onion and basil leaves in a large bowl.
  3. Pour over the olive oil and season to taste with salt and pepper.
  4. Arrange on a platter.
  5. Add the Rhodes diced beetroot to the salad.
  6. Drizzle with the balsamic vinegar reduction, if using, and serve.
Cooking Tip

Balsamic reduction is a sweet thickened syrup made from balsamic vinegar and sugar or honey. It is a condiment which pairs well with salads, vegetables and grilled meats. You can usually find balsamic vinegar reductions in the condiments or vinegar aisle at the grocery store.
